Our inaugural event is a French haute cuisine dinner by one of the Executive Chefs of our group Damien Neylon (formerly the Head Chef at Brae). Featuring the classic French main of duck a la presse, this intimate and spectacular evening also includes paired wines from Burgundy, the Loire Valley, Rhone & Provence.

Once upon a time, as our history books tell us, we threw elaborate French-style feasts in the tradition of Escoffier. A century later, we are bringing back the glory of our golden age, with a Special Dining Series starting with France.

This Friday 14th July, our new Group Executive Chef, Damien Neylon (formerly Head Chef at Brae) will be creating a French degustation dinner with matched wines. This intimate dinner draws on the hotel's historic menus and Damien's career, with the dishes referencing the French greats - L'Arpege, L'astrance, Pierre Gagniere, Paul Bocuse, Mirazur and Alain Chapel.

Belon oysters from Tasmania, gently warmed over a woodfire, sea urchin and winter pea tarts, and green garlic and escargot vol-au-vents are just some of the dishes forming the menu. 

There's also Damien's take on the classic French onion soup - transformed into a clear, amber-hued consomme, aged in oak barrels then finished with a splash of Armagnac - and 14-day aged and cherry-smoked Great Ocean duck breast pressed the traditional way.

The menu is paired with French wines from Burgundy, the Loire Valley, Provence and Rhone.

Reservations are essential with limited seats. We very much look forward to celebrating this special dinner with you.

The Chef

Executive Chef Damien Neylon joins our group after nine years as Head Chef at Brae. He has worked alongside Dan Hunter at the Royal Mail Hotel from 2006, with his career also spanning Mugaritz and stints overseas at Nahm, Noma, Relae and Osteria Francescana.
